Cap it off with a sweet dessert and your choice of earthy mushroom tea or aromatic coffee. Perfect for mushroom lovers and curious minds alike!

Dr. Grace Hoysted is an Assistant Professor in Environmental Biology and Sustainability at Maynooth University in Ireland. Her research interests include plant ecology, soil biodiversity, the plant and fungal microbiome and interkingdom interactions. Her research expertise includes plant-insect-soil pathogen interactions and plant mycology specifically the physiology, ecology and evolution of plant-rhizosphere interactions. She is particularly interested in mycorrhizal fungi and interactions with diverse microbes in both natural and agro-ecosystems. She is the recipient of a Fulbright Scholar Award, which is enabling her to research at the International Culture Collection of Vesicular Arbuscular Mycorrhizal Fungi (INVAM) at the university of Kansas (KU). INVAM is the world’s most comprehensive and long-standing collection dedicated to arbuscular mycorrhizal fungi. Here she is researching functional roles of these fungi in sustainable agriculture and ecosystem management.
